Hyderabad dum biryani - chicken

Dum is a method where the meat is cooked together with the rice. Dum briyani is definitely more flavorful than regular briyani as the flavors of the meat gets well infused into the rice during the cooking process. Indian cuisine and the making of briyani is a art which is worth the time and effort. You will not go back to the store bought briyanis after trying this yourself.

Part 1

ingredients

1 large chicken

1 tea cup yogurt

tbsp tomato puree 2

1/2 tea cup tomato sauce

1 Tbsp coriander powder

1 1/2 Tbsp briyani masala

1 Tbsp chill powder

1 Tbsp garam masala

1 Tsp tumeric powder

8-10 small green chills

handful coriander n mint leaves

2-3 Tbsp ginger garlic paste

1/2 a lemon juice

salt n pepper

Method

marinade the chicken with all of the ingredients listed above. You may be wondering why tomato sauce ???... WELL it's kinds unconventional but it makes a huge diff... TRUST ME! Marinate them not shorter than 4 hours.

Part 2

ingredients

25-30 small onions

vegetable oil

clarified butter/ghee

salt a pinch

Method

add oil n ghee on low flame to an non stick or porcelain pan. Once oil is hot add little salt n keep string. Continue until onions are well caramelized hand have a sticky consistency. Once done set aside.

Part 3

ingredients

4 Tbsp Milk

dash or rose water

afew strands of saffron

melted ghee

Method

milk all the ingredients listed in a small bowl and set aside.

Part 3

ingredients

3 cups basmathi rice

2 pods black cardamon

2 pods green cardamon

4 cloves

1 Tbsp fennel seeds

3 star anise

2 cinnamon sticks

2 bay leaves

1 Tsp pepper corns

2 Tbsp oil

salt 1.5-2 Tbsp

Method

1) wash and drain the basmathi rice and set aside.

2) In a heavy pot with lid pour water half full (water should be sufficient to submerge rice completely)

3) add all the spices, salt and oil listed above

4) once the water start to have small bubbles add the rice

5) The moment you see the first boil after the rice is added keep for 1 min and using a seive and drain all the water.

6) set the half cooked rice aside

Part 5

ingredients

handful Chopped mint and coriander leaves

caramelized onions

1 Tbsp garam masala

marinated chicken

milk and saffron mixture

Method

on stove place thosai pan/ flat cast iron skillet as base on top of it place a porcelain or mud pot over.

to layer the meat and rice

1) add the marinated chicken bottom

2) followed by rice

3) pour evenly the milk mix top

4) sprinkle mint n coriander leaves

5) add fried(caramelized) onion

6) lastly sprinkle with 1 Tbsp of garam masala

7) wrap the top with cloth before you cover with the lid you can do this in oven at 170 degree for 1 hour or over the stove in low flame cook for 30 - 40 mins.

Place something heavy to prevent steam from escaping

The rice will be cooked to perfection, fluffy and moist with the super juicy and tender chicken its hard to say no to home cooked briyanis. This dish accompanies well with raita or archa. These days going to restaurants is expensive and you can never find a good authentic dum. Most of the restaurant prepared dum briyanis have their meat and rice cooked separately and then mixed together. ULTIMATE DISAPPOINTMENT!!! Try this and you will not go back to little india!! :P

One major tip when cooking chicken to receive a tender perfection finish is to cook it in low flame and also not to over cook it.
